There are cheap options, where you eat at the restaurant and they provide Fado singing at no extra cost. If you stroll around at night in Alfama you'll probably bump to one of these restaurants. Some of them has tables outside and the singing is outside. That is what I usually recommend if they want a dinner with fado. The Fado restaurants are overrated and expensive. But if you want to go to a restaurant and have the "experience" of dinning with a fado show for tourists, then prepare to pay for the meal and it won't be cheap. They don't let you just sit and listen to Fado with a cup of wine.
On the other hand you have the Fado experience where you pay for a fado show with a cup of port wine included for a reasonable price https://lisboaemfado.pt/pt/ This is a good option for example for an end of afternoon before dinner. Or you can go to the fado museum, they used to have a show everyday. Check their website.

Weather is a bit unpredictable, but in general in June, Tshirt during the day and light jacket at night.
It doesn't rain in June, but this year we had abnormal rain, so bring a light waterproof jacket or umbrella, or buy it here in a chinese store.
Last couple of Junes hasn't been particularly hot, but the previous years (2018-2022) had been very hot even hotter than July and August.
A light jacket and you are fine for Lisbon.
Porto is cooler, although for me a light jacket is ok, but if you want to be in the safe side, bring a light sweater. Do not bring a heavier jacket. You will be much conformable if you can layer according to the weather.

I've just past to one of the streets where they have plenty of jacarandas and even took a picture, but didn't realize I can't attach a picture in this message, but right now (May 18th, 2025) , they started to bloom. The effect is not that impressive just some shades of purple. I guess next couple of weeks will get much better.
Just like the sakuras in Japan, it varies from the start April if the winter is warm to the end of May, or mid May to mid June if the winter is not particularly warm, like this year. So your safest bet is come in the end of 3rd week of May.

If english speaking and japanese ingredients are priority in your list, then Lisbon is the place to be. The rest of the country you can't find these 2 conditions.
Porto is cold, if you want warm weather you should consider from Lisbon to South.
In Algarve there are a lot of english speaking communities and it is a tourist area, so a lot of english speaking locals, but you also get a lot of tourists in the summer, but besides summer it is very pleasant place to live, because the weather is great and is quite laid back off season.
Setúbal fits most of the criteria: good weather, 30 min from Lisbon where you can get your ingredients, lots of great beaches nearby, small city so quite laid back compared to Lisbon, cheaper than Lisbon, lots of good fresh fish, I don't know aout co-working spaces, but it must have some. Only drawback, not so much english speaking people. But It is getting popular among the expats so there are a community of expats there too.
I would prefer Setúbal to Coimbra, Coimbra is much cooler.

I think if you have a resident permit within an EU country, you can come to Portugal, but I don't know if they will give you portuguese working/resident visa. I find the best way is to hire a solicitor or lawyer to deal with these matter. Although it costs money, but they know all there is to know to deal it. A lot of times better than the people in the embassy's or the emigration offices. Because a lot of time the people giving the information at these offices does not work daily with these matters and don't really knows how the things actually works. It is a bureaucratic process. I would use a solicitor (cheaper than the lawyer and they actually do the leg work, the lawyers a lot of the time send someone else to go to the departments).
Transferring children to a Portuguese school shouldn't be a problem.
Portugal, like Japan, is one of the countries in the world that is aging the fastest. But in Japan you encourage children to walk by themselves to anywhere. But in Portugal, most of the parents shields their children from that. If you go to a school at the end of the school day, there is always traffic jam near the school, because everybody goes to pick their children by car, and then they take them for the extra curricular activities also by car. That is why you don't really see children specially by themselves in the streets. Some kids don't even know how their building looks like, because they only go out by car from the garage. Adding that nowadays nobodys plays in the streets, they are all inside with their phones or gaming consoles.

I don't know what they will be asking, but a lot of people asks for a lawyer and/or solicitor to help with this matter, as the process is very bureaucratic and it usually takes a lot of time and they know all the ways to the process go smoothly.

Lisbon has definitely more places to visit, although a lot of people prefer Porto's vibe. Porto is older, darker, has a more somber feel, Lisbon is more lively and also more sun.
I recommend as minimum 2 days in Lisbon and 1 day in Porto. Day 1 Lisbon downtown (Alfama, Castle, Chiado, Bairro Alto) and Belém area (a lot of monuments and the river). Day 2 Cascais, Cabo da Roca and of course Sintra. Porto you can basically visit all the must see places in a walking tour in 1 day. If you have a spare day in Porto, then I recommend a cruise along the river to see the Douro wine region.

I think if you can in Chiado, it is better, because there are a lot of restaurants, bars and nnightlife (Lisbon has a vibrant nightlife) within walking distance. Avenida doesn't have much going on. But you can always take the metro to downtown.
On the other hand if you want quiet and have restful nights, then Avenida is preferable, because depending on which part of the Chiado, it can be quite noisy.

It doesn't matter if you to get in/out from Lisbon or Porto. I recommend as minimum stay, 2 days in Lisbon and 1 day in Porto.
If you are going to Sintra and Cabo da Roca with a local guide, better find a guide with car that can take you to Cabo da Roca and surrounding areas, which is worthwhile visiting. Else you will miss a lot of things and to come here for so little time and not make the most of it seems like a waste.
In Lisbon you can use Uber. that way you won't get ripped of. The metro works from 6:00h - 1:00h. So if you arrive at 23:30 I think you will be OK. As the last train leaves at 1:00h in the morning.
